Sweet corn is a sweeter variety than regular corn as it has more sugar than starch.
It is more commonly classified as a vegetable and can be eaten whole either boiled or grilled,in salads,made sweet or savoury depending on ones preference.
It is a great source of Vitamin C and anti oxidants and when paired with beans it is a marriage made in food heaven as it makes a complete protein.
I love sweet corn and especially when it is raw, try this recipe that uses boiled corn kernels and you will absolutely love it!
3 cups shredded spinach
2 cloves garlic,minced
1 cup sweet corn kernels(pre-boiled)
2 tablespoons extra virgin oil/vegetable oil
2 tablespoons cream
salt and pepper to taste
1.In a pan over medium high heat pour the olive oil and add the minced garlic,saute it till soft then add the spinach and let cook for 3 minutes.
2.Add the shelled sweet corn ,add salt and pepper to taste and let cook for a further 3 minutes.
3.Add the fresh cream ,stir it through the vegetables and let the cream heat through over low heat then serve.
